This homemade granola is just delicious. Please give it a go. I promise you will love it. I have even decided to give a few as wee gifts to friends.
- 440g jumbo organic rolled oats (I love Flahavan's Irish Organic Jumbo Oats)
- 120g pumpkin seeds
- 80g desiccated coconut
- 120ml maple syrup
- 1tbsp ground cinnamon
- 1/2 tsp ground nutmeg
- 4tbsp coconut oil, melted
- 80g pecan nuts
- 4 tbsp goji berries
Preheat the oven to 180C/160C fan/350 F/ Gas mark 4 and line 2/3 baking trays with baking parchment.
Combine all the ingredients (except the pecan nuts and goji berries) in a large bowl until the oats are coated in the oil. Spread the mixture out on the lined baking trays and bake for 10 minutes, then remove from the oven, add the pecan nuts, stir the granola, and return to the oven for a further 5-10 minutes, until the oats are lightly golden.
Remove the granola from the oven, stir in the goji berries and leave to cool completely to crisp up. Serve with your choice of yoghurt, milk and fruit. Stored in an airtight container, it will keep well for at least 2 weeks.
